Yields: About 2 cups
Ingredients:
1 cup Chefler’s X-Heavy Mayonnaise
2 tbsp ketchup
1 tbsp Dijon mustard
1 tbsp dill pickle brine
1 tbsp finely chopped dill pickles or relish
1 tsp Worcestershire sauce
1 tsp smoked paprika (or regular if unavailable)
½ tsp garlic powder
½ tsp onion powder
Pinch of cayenne pepper (optional for heat)
Salt and black pepper to taste
Instructions:
In a medium bowl, combine mayonnaise, ketchup, and Dijon mustard until smooth.
Stir in pickle brine, chopped pickles, Worcestershire, and spices.
Taste and season with salt and pepper as needed.
Cover and refrigerate for at least 30 minutes before service to let flavors develop.
Usage Notes:
Ideal for signature burgers, smash burgers, or chicken sandwiches.
Also works as a dip for fries or onion rings.
Can be batched and held refrigerated for up to 5 days.
Chef Tip:
For an upscale variation, swap in Calabrian chili paste or harissa in place of ketchup, and finely dice cornichons instead of standard pickles.
