Chorizo-Stuffed Sweet Potatoes

Ingredients

  • 4 medium sweet potatoes
  • 12 oz Smithfield ground chorizo
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • ½ cup cheese (queso fresco or shredded cheese)
  • 2 tbsp fresh cilantro or parsley, chopped

Instructions

  1. Preheat oven to 400°F. Pierce sweet potatoes with a fork and roast for 45–60 minutes, until tender.
  2. Heat olive oil in a skillet over medium heat. Add chorizo and cook until browned.
  3. Add diced pepper, onion, and garlic; sauté until softened, about 5–7 minutes.
  4. Slice open the roasted sweet potatoes and fluff the interior with a fork.
  5. Fill each potato with the chorizo mixture.
  6. Top with cheese and return to oven for 3–5 minutes, until melted.
  7. Garnish with fresh herbs, season with salt and pepper, and serve warm.
